Experts claim that it protects the liver and considers it the elixir of youth – Polenta and corn stews have been consumed since the time of Columbus. Among Romanians, it was and still is considered the food of the poor, although recent studies, conducted among some Amerindian tribes, have shown that the average life expectancy of those who ate corn products was much higher than those who did not include them in their diet.
Protects the stomach and liver: German specialists in plant cell biology at the University of Cologne recently discovered the presence of substances derived from arachidic and palmitic acids in corn kernels. From a chemical point of view, these substances are fatty acids, keto acids, resulting from the oxidation of palmitic and arachidic acid and are produced only and exclusively in the root of the corn plant.
These keto acids ignore the laws of classical chemistry and biology, being absorbed in the intestine with great ease, without undergoing chemical transformations except in a proportion of 22-28%. Once in the blood, they are transformed into hydroxy acids that can chemically combine with at least 57 species of poisons existing in the body. The detoxifying effect of the substances in corn eases the liver’s effort to neutralize toxic substances, considerably reducing the risk of liver failure and cirrhosis. Gastritis and ulcers are improved by consuming warm polenta instead of bread, cornmeal having an acidity-reducing and calming effect.
Prolongs life: Endocrinological researchers believe that daily consumption of polenta reduces the risk of mental illnesses caused by thyroid dysfunction by 60%. It also regulates blood glucose levels, which is beneficial for diabetics, and reduces blood cholesterol levels, thus reducing the risk of atherosclerosis and, implicitly, heart attack. Consumption of this food is also responsible for longevity, having been used as a medicine since Roman times.
Develops muscle: A Spanish physiologist observed that the most capable children for performance sports in Ecuador and Colombia had a diet rich in “corn porridge”. Subsequently, he initiated an extensive research program in sports medicine, discovering that the same substances derived from palmitic and arachidonic acid play a role in the development of muscle fiber, by modifying the mode of action of thyroid hormones.
Lowers cholesterol: Polenta has the ability to lower the amount of cholesterol in the body, implicitly reducing the risk of atherosclerosis and heart attack.
Prolongs ovarian life: Polenta revitalizes sexual functions, especially those of women. Romanian anthropologists conducted research in the Rucăr-Bran area, where polenta is more often found on Romanian tables, and discovered that 9% of women over 65 had very intense ovarian activity, manifested by prolonging sexual life even after the age of 72.
Beneficial for the obese: This corn preparation is also useful for those who suffer from obesity, because it provides a feeling of satiety extremely quickly, thanks to the dietary fiber in its composition.
