I’ve been looking at marshmallow recipes for years, and they were all kind of complicated, like needing a thermometer, or ingredients you can’t buy in a regular store. But my recipe is simple, so I recommend you make it too!
Homemade marshmallow recipe

Ingredients:
- Agar-agar 7 grams (this is gelatin, only of plant origin, it is what you need!)
- Water 50 grams
- Berry puree (any to taste) 100 ml
- Sugar 160 grams
- 1 egg white (1 size egg) + a pinch of salt + 40 grams of powdered sugar

Preparation:
Beat the egg whites with a pinch of salt, gradually add the powdered sugar. We need to beat until soft peaks form.
Pour cold water over the agar-agar, stir well, and add berry puree (I used blackcurrant).
Put on the stove, bring to a boil, add sugar.

Once it boils, cook the syrup for 5 minutes over medium heat, stirring constantly (the syrup should drip off the spatula/spoon).

Pour the hot syrup into the egg whites in a stream and beat continuously with a mixer. You should get a thick mass!

Transfer to a pastry bag with a nozzle.

We place our marshmallow on a silicone mat or siliconized parchment.

Leave to dry at room temperature for 6-8 hours.
Once the marshmallow dries, it will separate easily from the mat, but to prevent it from sticking, you need to roll it in a mixture of powdered sugar and starch in a 1:1 ratio.

After reading the recipe, it may seem complicated, but in fact everything is very simple!
