One-Pan Crispy Chicken Bites

Ingredients:

Chicken: 400 grams (14 ounces) boneless, skinless chicken breast

Batter:

1 egg

60 grams (2 ounces) sour cream or Greek yogurt

40 grams (1.5 ounces) all-purpose flour

1 teaspoon salt

Pinch of black pepper

Sauce:

½ red onion, diced

2 tomatoes, diced

50 grams (1.7 ounces) grated cheese (mozzarella, parmesan, or your favorite)

Instructions:

Prep the Chicken: Cut the chicken breast into bite-sized cubes (about 1 inch each). Season them with salt and pepper.

Make the Batter: In a medium bowl, whisk together the egg, sour cream or Greek yogurt, flour, salt, and pepper until smooth.

Cook the Chicken: Heat oil in a large pan over medium heat. Dredge each chicken cube in the batter, coating completely. Add the chicken to the pan and cook for 3-5 minutes per side, or until golden brown and cooked through.

Build the Sauce: While the chicken cooks, add the diced red onion to the pan along the edges. Sauté the onion for 1-2 minutes, until softened. Add the diced tomatoes and cook for another minute, allowing the tomatoes to soften and release their juices.

Serve it Up! Plate the cooked chicken bites and spoon the creamy tomato sauce over them. Sprinkle with grated cheese and serve immediately.
