Ingredients: Slow Cooker Roast Pork Loin
Pork loin OR shoulder/Boston rump, or Scotch bonnet, skinless (Note 1)
2 tablespoons olive oil, divided
Spice Rub:
1 teaspoon paprika, thyme
1 teaspoon each garlic powder, onion powder
1 teaspoon cayenne pepper, optional
1 tablespoon pepper
2 tablespoons salt
Honey Butter Sauce:
unsalted butter
1 clove garlic, minced
1/2 cup apple cider vinegar
1 teaspoon each salt and pepper
Thickener:
2 teaspoons cornflour/cornstarch mixed with a little water
How to: Slow Cooker Roast Pork Loin
Spice Rub: Rub the pork with about 1 teaspoon of oil. Mix and sprinkle over the pork. Pat to combine.
Brown: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the pork and brown until golden (do not let the seasonings burn). Transfer the pork to the slow cooker.
Honey Butter Sauce: Wipe out the skillet. Add the butter and melt. Add the garlic and cook for 1 minute until golden. Add the remaining sauce ingredients, mix, and cook briefly for 30 seconds.
Slow Cook: Pour the sauce over the pork. Cover the slow cooker.
Pork Loin: Cook on low for 4 to 5 hours (see Note 2 for cooking times for different sizes).
Pork Shoulder: Cook on low for 10 hours (see Note 2 for cooking times for different sizes and Note 4 for oven, Instant Pot, and pressure cooker methods). Therefore, remove the pork to a serving dish and loosely cover it with aluminum foil (let it rest for 10β20 minutes). (See Note 6 on cooking.)
Of course, pour all the juices from the slow cooker into a large saucepan. Add the cornflour and water mixture and stir.
Thicken sauce: Then cook over medium heat for 5 minutes or until reduced to a syrupy consistency (Note 3).
Finally, slice the pork into thick slices (1.5β2 cm / 3/5β4/5 inch thick). Serve with plenty of the honey butter sauce!
