To prepare, you will need the following ingredients:

  • 400 grams of chicken feet;
  • 2.5 liters of water for broth;
  • 1 medium carrot;
  • 2 medium onions;
  • 3 medium sized potatoes;
  • 100 grams of noodles;
  • 1 bunch of parsley;
  • 2 tablespoons sunflower oil;
  • 2 bay leaves;
  • salt, black peppercorns;
  • your favorite spices.

First, sear the chicken feet over a flame. Ideally, you can do this on a grill. However, if you don’t have that option, you can simply sear them on a gas stove.

Next, remove the skin from the paws and trim the claws. Rinse the paws and place them in a large pot. Cover them with water and bring to a boil.

When foam begins to form on the surface of the water, you can skim it off with a slotted spoon or simply drain the water and pour clean water over the chicken legs. Simmer the broth for about an hour.

After this, add chopped carrots (you can grate them) and sautéed onions to the broth.

Dice the potatoes and add them to the pan. Add salt, bay leaf, and a few grinds of black pepper.

About 10 minutes before it’s ready, add the noodles to the soup, and as soon as you turn off the heat, don’t forget to add chopped fresh herbs to the soup.

  • 800 grams of chicken feet;

  • salt.

Chicken feet need to be cleaned and the claws trimmed. It’s best to scald them with boiling water first.

Cover the prepared chicken feet with water and place the pot on the stove. When the water boils, drain it, cover the feet with clean water, and simmer over low heat for at least 5 hours.

Cover the pan with a lid. Once the water returns to a boil, skim off any foam that may still form, then add salt, peppercorns, bay leaf, and onion.

Strain the finished broth, add chopped chicken fillet and cook until done.

Cut the finished fillet into portions and arrange them on plates. Add chopped fresh herbs and a ring of pickled cucumber to each plate. Pour the broth over everything and refrigerate overnight.
