Pancakes hold a special place in our culture, being more than just a breakfast dish. They have deep historical roots, and many legends, proverbs and references in fairy tales are associated with them.
Pancakes acquire special significance during Maslenitsa. Did you know that with their help you could win over the groom’s family? On the 3rd day of Maslenitsa, the future mother-in-law was supposed to treat her sons-in-law. If there were pancakes on the table, in addition to pancakes, this indicated the hostess’s high regard for the guests.
And in our time, pancakes remain a popular dish. They’ve changed a little, but they’re still just as delicious.

In a deep bowl, mix kefir with salt, sugar, egg and soda, beat until smooth.
Cut the sausage into small cubes and chop the onion finely.
Add chopped sausage and onion to the kefir mixture.
Gradually sift the flour into the kefir mass, kneading the dough for pancakes.
For ease of portion dosing, transfer the dough into a pastry bag.
Heat the vegetable oil in a frying pan.
Squeeze the dough out of the bag into the frying pan in portions, forming pancakes.

Fry the pancakes over medium heat until golden brown on both sides.


This method of preparing pancakes is almost identical to the classic one, except that sausage and onions are added to the dough, which gives the pancakes an unusual and rich taste.
