Homemade crispy chicken and cheese rolls


Ingredients:
2 chicken fillets
3 hard-boiled eggs
200 g Fresh cheese (e.g. quark)
200-300 g Mushrooms
30 ml Vegetable oil
0.5 teaspoon Salt
1 tablespoon lemon salt
2 tablespoons parsley (chopped)
Salt and ground black pepper to taste
200g mozzarella
2 eggs
0.5 cup flour
0.5 teaspoon salt
1 cup breadcrumbs
1 teaspoon turmeric
Instructions:

Start by finely chopping your mushrooms, then sauté them in vegetable oil until golden brown. Season them with salt and pepper. Set them aside to cool.

Take the chicken fillets and mash them finely between sheets of cling film. Season the fillets with salt, lemon salt and black pepper.

In another bowl, mix the cream cheese with the chopped parsley, then add the cooled mushrooms. Add the hard-boiled eggs, finely chopping or grating them and mix everything well.

Preheat the oven to 180°C (356°F).

Spread the cheese and mushroom mixture over the flattened chicken fillets, then roll them up tightly.

Cut the mozzarella into slices and place the pieces in each chicken roll to create a gooey center.

Prepare three separate bowls for the breading: one with flour mixed with 0.5 teaspoon salt, one with beaten eggs, and one with breadcrumbs mixed with turmeric.

Roll each chicken roll in flour, dip in the beaten eggs, then coat with the turmeric and breadcrumb mixture.

Place the breaded rolls on a baking tray lined with baking paper.

Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the breading is golden and crispy.

Let the rolls rest for a few minutes before slicing them. Serve hot with sauce of your choice or a side salad
