Come and prepare the fried gnocco.
In a bowl combine flour, sparkling water, milk, lard and salt.
Knead well until you obtain a soft dough, close it with cling film and let it rest for 20 minutes.
After resting, divide the dough and roll it with the material to a thickness of about 4 millimetres.
Cut the dough into squares and fry them in boiling oil or lard for a few seconds: when they swell they are ready.
Serve the fried gnocco with excellent cured meats.
Tips
You can replace the lard with the same quantity of extra virgin olive oil, even if lard is the ingredient that gives the fried gnocco a unique crunchiness.
