The charming and incredibly tasty “Botlikh” pie has become my favorite! Incredibly, it is prepared surprisingly simply and quickly, which makes it a frequent guest on my table.

Cooking:
Pour kefir into a large bowl, add soda and mix until smooth.

Add the egg to the mixture, add sour cream, melted butter, salt and sugar, and mix thoroughly.

Gradually add sifted flour, knead the dough, which is then put into the freezer for 20 minutes in a tightly closed bag.

Dry the walnuts in a dry frying pan for about 3-4 minutes, then transfer them to a blender bowl.

Add sugar to the nuts and grind until finely crumbled, pour into a separate bowl.

Similarly, grind the dried apricots with sugar.

Divide the dough into three parts: two equal portions of 23.5 g and one larger portion of 37.5 g.

Roll out most of the dough and place it in a 26 cm diameter pan.

Spread the nut filling evenly over the dough.

Roll out the second layer and cover the nuts.

Spread the dried apricot filling on top.

Cover with a third layer of dough and brush it with beaten egg.

Sprinkle the pie with chopped nuts and bake in the oven at 180°C for 35 minutes.
