Ingredients

Cabbage, shredded (amount not specified in text)
Carrot, shredded (amount not specified in text)
Half a white onion, chopped
Half a bell pepper, chopped
2 chicken eggs
Salt and pepper (to taste)
2 large tablespoons of flour
70 ml of water
Another large tablespoon of flour
Olive oil
Instructions
Shred the cabbage and carrot. You can use a food processor or a box grater to shred the vegetables.
Mix the shredded vegetables with the salt. Let the mixture sit for a few minutes to draw out the moisture from the cabbage.
Squeeze out any excess moisture from the cabbage. You can do this by hand or by using a cheesecloth.
Add the chopped onion, bell pepper, eggs, flour, water, and salt and pepper to the cabbage mixture. Mix everything together until well combined.
Heat olive oil in a pan over medium heat. Once the oil is hot, add scoops of the batter to the pan.
Cook the fritters for a few minutes per side, or until golden brown. You can cover the pan while cooking to help the fritters cook through.
Serve hot.
