Since getting my air fryer, making healthy bread has become practical, quick, and almost automatic. This recipe is perfect if you want a more nutritious option with simple, easy-to-follow ingredients. Ideal for breakfast, a snack, or as a side dish.
You don’t need any prior baking experience. Just follow the steps and let the fermentation do its work.
Ingredients
- 200 ml of warm water
- 1/2 teaspoon of sugar
- 4g of fast-acting dried yeast
- 30g of odorless vegetable oil
- 200g wholemeal flour (add in parts)
- 50g of white wheat flour
- 1/2 teaspoon of salt
Step by step
1. Activate the yeast
In a bowl, mix the warm water with the sugar and yeast. Let it sit for a few minutes until it starts to foam.
2. Combine the ingredients
Add the vegetable oil. Gradually incorporate the whole wheat flour, then the white flour. Add the salt and mix until a smooth dough forms.
3. Kneading and first fermentation
Knead for a few minutes until the dough is smooth and slightly elastic.
Place it in a bowl and let it rise in a warm place for 1 to 1 1/2 hours, until it has doubled in size.
4. Second fermentation
Gently deflate the dough, shape it, and place it in the mold or directly into the fryer basket suitable for baking.
Let it rest again for 30 minutes in a warm place.
5. Prepare for baking
Brush the surface with warm water or milk to achieve a more golden crust.
6. Cooking
Bake in the air fryer at 180°C (356°F) for 25 to 30 minutes.
If your air fryer doesn’t have a bottom heating element, turn the bread over and cook for an additional 10 minutes to ensure even browning.

Tips and recommendations
- If you want an even fluffier bread, sift the white flour before adding it.
- Do not use hot water, only lukewarm, as very hot water can damage the yeast.
- You can add seeds like chia, flaxseed or sunflower to increase the nutritional value.
- Every air fryer is different: check the bread after 20 minutes to prevent it from over-browning.
- If you’re looking for a lower-carb version, you can substitute some of the white flour with almond flour.
