Ingredients for Fritters:
2 zucchini, grated
1 onion, finely chopped
1 carrot, grated
1 bell pepper, chopped
2 cloves of garlic, minced
3 eggs
Salt, to taste
Pepper, to taste
Paprika, to taste
50g cheese, grated (choose as per preference, feta or cheddar works well)
Fresh dill, chopped
1 tbsp breadcrumbs
2-3 tbsp flour
Fresh parsley or cilantro, chopped

Ingredients for Yogurt Dill Sauce:
4-5 tbsp yogurt
1 tbsp mayonnaise
Fresh dill, chopped
Instructions:
In a large bowl, combine grated zucchini, cooked rice, chopped onion, grated carrot, chopped bell pepper, and minced garlic.
Beat the eggs and add them to the zucchini mixture.
Season the mixture with salt, pepper, and paprika. Stir to combine.
Add the grated cheese and a generous amount of chopped dill, parsley or cilantro to the mix. Mix until all ingredients are well incorporated.
Sprinkle breadcrumbs and flour into the mixture, starting with the smaller amount and adding more if needed to make the mixture hold together.
In a frying pan, heat a little oil over medium heat. Using a spoon or your hands, form patties from the zucchini mixture and fry until golden
brown on both sides, about 4-5 minutes per side.
7. Once cooked, place the fritters on a paper towel to remove any excess oil.
For the Yogurt Dill Sauce:
In a small bowl, mix the yogurt and mayonnaise until well combined.
Stir in the chopped dill.
