Ingredients:

1 red bell pepper, finely chopped
6 spring onions, thinly sliced
A handful of fresh parsley, finely chopped
2 carrots, grated
2 eggs
140 grams (1 tea glass) of yogurt
100 milliliters (1 tea glass) of milk
80 grams of curd cheese
420 grams (3.5 cups) of flour
10 grams (1 packet) of baking powder
8 grams (1 teaspoon) of salt
Vegetable oil for frying
Instructions:
Prepare the Batter:
In a large bowl, combine the chopped red pepper, sliced spring onions, grated carrots, and chopped parsley.
Add the eggs, yogurt, milk, and curd cheese to the bowl. Stir until all the ingredients are well mixed.
Sift the flour, baking powder, and salt into the wet ingredients. Mix gently until a thick batter forms. Avoid overmixing to keep the fritters tender.
Heat the Oil:
Pour vegetable oil into a deep frying pan to a depth of about 2 inches. Heat the oil over medium heat until hot. A small drop of batter should sizzle when dropped into the oil.
Fry the Fritters:
Carefully drop spoonfuls of the batter into the hot oil. Do not overcrowd the pan.
Fry the fritters until golden brown and cooked through, about 3-4 minutes per side.
Remove the fritters with a slotted spoon and drain on paper towels.
Serving:
Serve the fritters hot. They can be enjoyed alone or with a dipping sauce such as a yogurt-based dip or hot sauce.
