Ingredients:
Zucchini, sliced into medallions
Shredded cheese (your choice, but mozzarella works well)

Instructions:

Prepare the Zucchini:
Wash the zucchini thoroughly and cut into even medallions, about 1/4 inch thick.
Season:
Lay the zucchini slices on a cutting board and sprinkle them with salt and pepper.
