During the season of young cabbage, I only make salads from it. I like them so much because they are tasty, light, and healthy.
Every time I add different ingredients to the cabbage, and this significantly changes the taste of the salad, so I never get tired of cabbage.

Today I want to share with you my favorite recipe for baby kale salad.
We will need the following ingredients:
- Fresh cucumbers – 4 pcs.; young cabbage – 350 gr.;
- Boiled eggs – 4 pcs.; canned corn – 350 gr.;
- Garlic – 1 clove; low-fat sour cream or plain yogurt – 5 tbsp.;
- Mustard – 1 tsp; salt and pepper;
- Fresh dill – 1 bunch.
Preparing the salad is as follows:
Thinly shred the cabbage. Knead it a little with your hands. Add the cucumbers cut into strips. Separate the whites and yolks from the boiled eggs. Chop the whites in the same way as the cucumbers. Drain the liquid from the corn.
Add finely chopped greens to all these ingredients.
Mash the yolks with a fork, add mustard and yogurt. Be sure to season with salt and pepper. Mix and dress
the salad.
It is best to serve this salad immediately. Enjoy!
