Spinach and Cheese Puff Pastry Squares

Ingredients:

1 sheet puff pastry

7 oz baby spinach

2 garlic cloves, minced

1 tbsp olive oil

8 oz cream cheese

1/2 cup mozzarella cheese, shredded

1 egg, beaten

1 egg yolk

Pinch of salt

Pinch of black pepper

Instructions:

Preheat the Oven:

Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.

Prepare the Spinach:

Heat olive oil in a pan over medium heat. Sauté minced garlic for about 2 minutes until soft and fragrant.

Add baby spinach to the pan, season with salt and pepper, and sauté until wilted. Remove from heat and let cool.

Prepare the Puff Pastry:

Cut the puff pastry sheet into 6 or 12 squares, depending on your desired size. Place squares on the prepared baking tray.

Make the Filling:

In a mixing bowl, combine cooled spinach, cream cheese, mozzarella cheese, and beaten egg. Season with salt and pepper, then mix until well combined.

Assemble the Pastry Squares:

Divide spinach mixture evenly among puff pastry squares, placing a spoonful in the center of each square.

Fold two opposite edges of each square towards the center, pressing tightly to seal.

Prepare for Baking:

Brush the tops of the pastry squares with beaten egg yolk for a glossy finish.

Bake:

Bake in the preheated oven for 25 to 35 minutes, until puffs are golden brown and pastry is cooked through.

Serve:

Remove from oven and let cool slightly before serving. Enjoy warm or at room temperature.
