Ingredients:

2 eggs
600g chicken breast
1 onion
1 clove of garlic
Olive oil
Butter
1 carrot
70-80g Parmesan cheese
Mozzarella cheese
Cherry tomatoes
Oregano
Salt
Pepper mixture
Paprika
Instructions:
Preparation of Chicken Base:
Preheat your oven to 200°C (392°F).
Cut the chicken breast into thin strips and place them in a bowl.
In a separate bowl, whisk together the eggs, finely chopped parsley, minced garlic, salt, pepper mixture, and paprika.
Pour the egg mixture over the chicken strips, ensuring they are well-coated.
Grease a baking tray with olive oil or butter and spread the chicken mixture evenly to form the pizza base.
Bake the chicken base in the preheated oven for about 15-20 minutes until it is firm and slightly golden.
Preparing the Toppings:
While the base is baking, finely chop the onion and carrot.
In a pan, heat a little olive oil and sauté the onion and carrot until they are soft.
Season with a pinch of salt, pepper, and oregano.
Assembling the Pizza:
Once the chicken base is baked, remove it from the oven.
Spread the sautéed onion and carrot mixture over the chicken base.
Grate the Parmesan cheese and sprinkle it evenly over the top.
Add slices of mozzarella cheese.
Halve the cherry tomatoes and place them on top of the cheese.
Sprinkle a little more oregano on top.
Final Baking:
Return the assembled pizza to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
Serving:
Remove the pizza from the oven and let it cool slightly before slicing.
Garnish with fresh parsley and serve warm.
