Basket of French fries with aromatic herbs

Ingredients:
4 large potatoes
2 cups chopped fresh parsley
1 teaspoon chicken stock or chopped green onions
2 teaspoons cornstarch
1 teaspoon salt (or to taste)
½ cup ground black pepper
Oil for frying
Guidelines:

1. Prepare the potatoes:
Peel the potatoes and grate them finely.
Place the grated potatoes in a colander and rinse them under running water to remove any excess starch.
Transfer the grated potatoes to a paper towel or dish towel and squeeze out as much moisture as possible.
2. Combine the ingredients:
In a large bowl, combine the grated potatoes, chopped parsley, green onions (or chives), cornstarch, salt, and pepper.
Mix well so all the ingredients are evenly distributed.
3. Make the squares:
Spread the potato mixture out on a flat surface or large plate, smoothing it out to about 1/4 inch thick.
Cut the mixture into small squares, about 1 inch on each side.
4. Fry the squares:
Heat the oil in a skillet or deep fryer to 350°C (175°F).
Fry the potato squares in small batches for about 2-3 minutes on each side, or until golden and crispy.
Remove the fried squares with a slotted spoon and place on paper towels to absorb excess oil.
5. Serve:
Serve the crispy potato squares warm as a side dish or snack.
Add an extra pinch of salt and pepper, if desired.
