Ingredients:

For the Chicken Filling:
300g chicken, boneless and finely chopped
1 tsp garlic paste
2-3 tbsp yogurt
1 tsp black pepper
1 tbsp chili flakes
Salt, to taste
1 tbsp lemon juice
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 medium capsicum, finely chopped
50g-100g cheese, grated
Coal, for smoke
For the Dough:
750g flour
Luke warm water, as required
11g yeast
2 tbsp sugar
1 tsp salt
½ cup milk
1 egg
2-3 tbsp ghee/butter
Instructions:
Prepare the Dough:
In a small bowl, dissolve the yeast and sugar in lukewarm water. Let it sit for 10-15 minutes until frothy.
In a large mixing bowl, combine the flour and salt.
Make a well in the center and add the yeast mixture, milk, egg, and ghee/butter.
Knead the dough until it is smooth and elastic, adding more lukewarm water as needed.
Cover the dough with a damp cloth and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
Prepare the Chicken Filling:
Heat oil in a pan over medium heat.
Add garlic paste and sauté until fragrant.
Add the chicken and cook until it changes color.
Stir in the yogurt, black pepper, chili flakes, salt, and lemon juice. Cook for a few minutes.
Add the chopped onion, tomato, and capsicum. Cook until the vegetables are tender.
Remove from heat and let it cool.
Once cooled, mix in the grated cheese.
Give the Filling a Smoky Flavor:
Place a small piece of coal on the stove and let it heat until red hot.
Place the hot coal in a small bowl and set it in the middle of the chicken mixture.
Drizzle a few drops of oil over the coal and immediately cover the pan with a lid to trap the smoke.
Let it sit for a few minutes to infuse the chicken with a smoky flavor. Remove the coal and bowl.
Assemble the Bread:
Divide the dough into small portions and roll each portion into a ball.
Roll out each ball into an oval or rectangular shape.
Place a portion of the chicken filling in the center of the dough.
Make cuts along the sides of the dough and braid them over the filling to enclose it.
Heat a large, heavy-bottomed pan or skillet over medium-low heat.
Grease the pan with a little oil or butter.
Cook the Bread:
Place the prepared bread in the pan.
Cover the pan with a tight-fitting lid and cook for about 15-20 minutes on low heat.
Flip the bread and cook for another 10-15 minutes on the other side until the bread is golden brown and cooked through.
Serve:
Remove the bread from the pan and let it cool slightly before slicing.
Serve warm.
