Ingredients:
150 g soft fat-free cottage cheese (or cream cheese for a richer texture)
50 ml milk
1 tsp Jerusalem artichoke syrup or honey (as a healthier sweetener)
1 tsp vanilla extract (or syrup for added flavor)
70 g sugar-free bitter chocolate (sweetened with stevia or another sugar substitute)
20 g nuts (for added texture and nutritional value)

Instructions:
Begin by melting the sugar-free chocolate over a water bath. To create a water bath, fill a pot with a small amount of water and place a heatproof bowl on top, ensuring the bottom of the bowl does not touch the water. Break the chocolate into pieces and place them in the bowl, stirring occasionally until fully melted.
Once the chocolate is melted, distribute it into molds of your choice. This will create the bottom layer of your dessert. Make sure to use just enough chocolate to cover the bottom, saving some for the top layer.
Place the molds into the freezer to allow the chocolate to set. This should take approximately 10 minutes, depending on the thickness of the chocolate layer.
In the meantime, mix the milk with gelatin in a small saucepan. Let it sit for a few minutes to bloom, which means the gelatin will absorb the liquid and soften.
Gently heat the milk and gelatin mixture over low heat, stirring continuously until the gelatin fully dissolves. Be careful not to boil the mixture, as boiling can prevent the gelatin from setting properly later on.
In a separate bowl, combine the soft cottage cheese with the Jerusalem artichoke syrup (or honey) and vanilla extract. Whisk them together until you achieve a smooth consistency.
Once the gelatin is fully dissolved and slightly cooled, add it to the cottage cheese mixture and mix thoroughly.
Take the molds from the freezer and distribute the cottage cheese mixture over the set chocolate base. Sprinkle the top with your choice of nuts for a crunchy element.
Place the molds back into the freezer for another 10 minutes, so the cottage cheese layer begins to firm up.
Remove the molds from the freezer and pour the remaining melted chocolate over the top of the cottage cheese mixture to create the final layer.
Return the molds to the freezer and leave them for at least 1 hour, or until everything is completely set and firm.
Once set, remove the dessert from the molds. If you have trouble removing them, briefly dip the bottom of the molds in warm water to loosen the chocolate.
Serve the desserts chilled as a guilt-free indulgence.
