Ingredients:
1 tomato
1/2 cup chopped spring onions
50 g mozzarella cheese, grated
3 chicken eggs
Salt, pepper, and mayonnaise to taste
1/2 tablespoon olive oil
Instructions:

Preheat oven to 200°C (400°F).
Cut off the top of the tomato and scoop out the seeds, creating a hollow shell. Season the inside of the tomato with salt and pepper.
In a bowl, combine chopped spring onions, mozzarella cheese, and mayonnaise. Season with salt and pepper to taste.
Crack the eggs into the tomato shell. Divide the cheese mixture evenly among the tomatoes.
Place the tomatoes in a baking dish greased with olive oil.
Bake for 20-25 minutes, or until the egg whites are set and the cheese is melted and golden brown.
Tips:
For a vegetarian option, you can use crumbled feta cheese instead of mozzarella.
You can also add other ingredients to the stuffing, such as chopped ham, sausage, or spinach.
If you don’t have mayonnaise, you can use sour cream or plain yogurt instead.
