Ingredients needed for the dough:
- 350 ml of warm milk
- 2 tablespoons sugar
- 1 pinch of salt
- 50 ml of oil
- 50 g
- 2 eggs
- 700-750 g of flour
- 7 g of dry yeast
Ingredients needed for the filling:
- 300 g salted cheese (can be replaced with sweet ricotta)
- Greens to taste
- Salt to taste
From the above ingredients we get 24 sandwiches.
Preparation method:
For the dough, put a whole egg and an egg white in a bowl. Add the sugar and a pinch of salt and mix with a whisk until the mixture is smooth. We keep the yolk to grease the rolls.
Add the oil, warm milk and yeast and mix. Gradually add the sifted flour and soft butter and knead until the dough is non-sticky, smooth and soft.
Form the dough into a ball and place it in a clean bowl. Cover the bowl with aluminum foil and place it in a warm place. Let the dough rise for 60-90 minutes.
After rising, we transfer the dough to the work surface. We knead it for a while and then divide it into 4 equal parts. We form 4 balls that we cover with cling film and leave them aside for 15-20 minutes.

In the meantime, prepare the filling. Grate the cheese and mix it with the finely chopped vegetables. If necessary, we can also add a little salt.
Take the first piece of dough and roll it out on a floured work surface into a 20-22 cm round surface. Cut into 6 triangles and make 3 incomplete cuts on each triangle. Stretch the triangles a little with your hands and put 1 tablespoon of filling on each.
We fold the tip over the filling and glue it under the base. We proceed in the same way and form all the buns.
We transfer the rolls onto a baking sheet lined with baking paper, leaving space between them. We leave them aside for 10-15 minutes, after which we brush them with the egg yolk mixed with 1 tablespoon of milk.
Place the pan in the oven preheated to 180 degrees for 25-30 minutes.
