Recipe:
Ingredients:

500g Chickpeas
1 Onion
3 Garlic Cloves
1 Handful of Fresh Parsley
1 Handful of Fresh Coriander
1 tablespoon Ground Cumin
50-75g Breadcrumbs
1 tablespoon Sodium Bicarbonate
Salt and Pepper
Oil for Frying
Begin by soaking the chickpeas in water overnight or for at least 8 hours. Drain and rinse them thoroughly before using.
In a food processor, combine the soaked chickpeas, roughly chopped onion, garlic cloves, parsley, coriander, ground cumin, salt, and pepper. Blend until you achieve a coarse mixture.
Transfer the mixture to a large mixing bowl and add the breadcrumbs and sodium bicarbonate. Mix well to combine.
Shape the mixture into small balls or patties, compacting them firmly to prevent them from falling apart during frying.
Heat oil in a deep fryer or large skillet to 180Β°C (350Β°F).
Carefully lower the falafel into the hot oil, making sure not to overcrowd the pan. Fry them in batches if necessary.
Fry the falafel for 3-4 minutes, or until they are golden brown and crispy on the outside.
Once cooked, remove the falafel from the oil using a slotted spoon and transfer them to a plate lined with paper towels to drain any excess oil.
Serve the falafel hot and crispy, either stuffed into pita bread with fresh salad and tahini sauce or enjoyed on their own as a flavorful snack.
