Ingredients:

2 onions (500g)
40g green onion
Batter:
120g all-purpose flour
30g corn starch
1 TBSP onion powder
1/3 TBSP garlic powder
1/3 TBSP salt
1/2 TBSP baking powder
180ml sparkling water
For Frying:
Cooking oil (enough for deep frying)
Medium heat (170β-180β)
Instructions:
Prepare Vegetables:
Slice the onions, carrot, and green onion into thin strips.
Make the Batter:
In a large bowl, mix together the all-purpose flour, corn starch, onion powder, garlic powder, salt, and baking powder.
Gradually add the sparkling water to the dry ingredients, stirring until you get a smooth batter.
Heat the Oil:
In a deep frying pan or pot, heat the cooking oil to medium heat (170β-180β).
Fry the Vegetables:
Dip the sliced vegetables into the batter, ensuring they are fully coated.
Carefully place the battered vegetables into the hot oil.
Fry for 5-8 minutes until they turn golden and crispy.
Remove from the oil and let them drain on a paper towel.
Double Fry:
For extra crispiness, fry the vegetables again for an additional 3-5 minutes.
Remove and drain again on a paper towel.

2 TBSP mayonnaise
1 TBSP Sriracha sauce
1/2 TBSP sugar
1 TBSP lemon juice
Instructions:
Mix the Sauce:

Stir well until all ingredients are fully incorporated.
