Ingredients:

For the ground:

200 g biscuit crumbs (e.g. butter biscuits)
100g melted butter
For the filling:

750 g cream cheese
200g sugar
3 eggs
1 teaspoon vanilla extract
Juice and zest of a lemon
Directions:

Preheat oven: Preheat your oven to 160 degrees Celsius (fan oven). Grease a 23 cm springform pan well or line the bottom with baking paper.
Prepare the base: Crush the cookies until you have fine crumbs. Mix the cookie crumbs with the melted butter and press the mixture evenly into the bottom of the springform pan.
Make the filling: In a large bowl, combine the cream cheese, sugar, eggs, vanilla extract, lemon juice and lemon zest. Make sure the mixture is smooth and well combined.
Pour the filling: Pour the cheese mixture over the cookie base in the springform pan.
Bake: Bake the cheesecake in the preheated oven for about 45-50 minutes. The cake should be firm but still slightly wobbly in the center.
Allow to cool: Allow the cheesecake to cool in the pan. Then place it in the fridge for at least 4 hours or overnight.
Serve: Carefully remove the cheesecake from the springform pan and serve it in pieces. If you like, you can garnish it with fruit, cream or a pinch of powdered sugar.
