Ingredients:
Chicken Breast: 2 pieces, boneless and skinless
Salt: to taste
Black Pepper: to taste
Garlic Powder: 1 teaspoon
Paprika: 1 teaspoon

Olive Oil: 2 tablespoons
Subway-style Bread: 2 long rolls
Mayonnaise: 4 tablespoons
Mustard: 2 tablespoons
Lettuce: 2 cups, shredded
Tomato: 1 large, sliced
Cucumber: 1, sliced
Red Onion: 1/2, thinly sliced
Pickles: 1/2 cup, sliced
Cheddar Cheese: 4 slices
Avocado: 1, sliced (optional)
Jalapeños: sliced (optional)
Chipotle Sauce: 2 tablespoons (optional for a spicy kick)
Instructions:
Marinate the Chicken:
In a bowl, combine salt, black pepper, garlic powder, and paprika.
Rub the chicken breasts with olive oil and coat them with the spice mixture. Let them marinate for at least 15 minutes.
Cook the Chicken:
Preheat a grill or grill pan over medium-high heat.
Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and no longer pink inside. Let the chicken rest for a few minutes, then slice it thinly.
Prepare the Bread:
Slice the Subway-style rolls lengthwise but not all the way through, creating a hinge.
Toast the bread lightly on a grill or in a toaster oven if desired.
Assemble the Sandwiches:
Spread mayonnaise and mustard evenly on both sides of the bread.
Layer the shredded lettuce, sliced tomato, cucumber, red onion, and pickles on the bottom half of each roll.
Place the sliced grilled chicken on top of the vegetables.
Add cheddar cheese slices on top of the chicken.
Add optional toppings like avocado slices, jalapeños, and chipotle sauce for extra flavor.
Finish and Serve:
Close the sandwich by folding the top half of the bread over the fillings.
Press down gently to secure the ingredients.
Cut the sandwiches in half for easier handling.
