Ingredients:

1.2 kg chicken meat (pieces such as thighs or drumsticks)
0.5 kg onions, finely chopped
1 tsp sweet paprika
3/4 tsp Khmeli Suneli (Georgian spice blend)
0.5 tsp dried garlic
0.5 tsp black pepper
0.5 kg tomatoes, peeled and chopped (or use canned tomatoes)
Salt, to taste
Fresh cilantro or parsley, chopped (for garnish)
2 tbsp vegetable oil
Instructions:
Prepare the Chicken:
Heat the vegetable oil in a large pot or deep skillet over medium-high heat.
Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
Cook the Onions:
In the same pot, add the finely chopped onions and cook until they are soft and translucent, about 10 minutes.
Add the Spices:
Add the sweet paprika, Khmeli Suneli, dried garlic, and black pepper to the onions. Stir well to combine and cook for an additional 1-2 minutes to release the aromas of the spices.
Add the Tomatoes:
Add the chopped tomatoes to the pot and stir to combine. Cook for about 5-7 minutes until the tomatoes start to break down and form a sauce.
Combine Chicken and Sauce:
Return the browned chicken pieces to the pot. Stir to coat the chicken with the vegetable sauce.
Reduce the heat to low, cover the pot, and simmer for about 30-40 minutes, until the chicken is cooked through and tender. Stir occasionally and add a little water if the sauce becomes too thick.
Season and Garnish:
Taste and adjust seasoning with salt as needed.
Garnish with fresh cilantro or parsley before serving.
