
Ingredients:
200 g grated cheese to taste
4 eggs
bread crumbs
pepper
oil
salt
Preparation:
- Separate the whites from the yolks of two eggs and beat the whites until stiff with a pinch of salt.
- When they are very solid, add one of the yolks, the cheese and a little pepper, stirring to mix everything well.
- Form this dough into balls that are coated first in breadcrumbs, then in beaten egg and again in breadcrumbs. They are fried in a frying pan with plenty of hot oil, transferred to a platter lined with kitchen paper to absorb the fat, and served.
