Ingredients
For the Cookies:
2 packages (about 16 oz each) Ritz crackers
1 cup creamy peanut butter (or your choice of nut butter)
1 cup caramel sauce (store-bought or homemade)
Sea salt (for sprinkling)
For the Chocolate Coating:
1 1/2 cups semi-sweet chocolate chips
1 tablespoon vegetable oil (optional, for smoothness)
Instructions
Prepare the Cookies: Lay out half of the Ritz crackers on a baking sheet.
Spread Peanut Butter: Using a knife or small spatula, spread about 1 tablespoon of peanut butter on each cracker.
Top each with another cracker to form a sandwich.
Make the Caramel Sauce: If using store-bought caramel, warm it slightly to make it easier to drizzle.
If making homemade, prepare it according to your recipe.
Drizzle Caramel: Drizzle or spoon a small amount of caramel sauce on top of each cracker sandwich.
Allow it to set for a few minutes.
Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and vegetable oil (if using).
Microwave in 30-second intervals, stirring between each interval until the chocolate is completely melted and smooth.
Coat the Cookies: Dip each cracker sandwich into the melted chocolate, making sure to coat it completely. Use a fork to lift it out and allow any excess chocolate to drip off.
Set on Baking Sheet: Place the coated cookies back onto the baking sheet lined with parchment paper.
Sprinkle with Sea Salt: While the chocolate is still wet, sprinkle a pinch of sea salt on top of each cookie.
Chill: Refrigerate the cookies for about 30 minutes, or until the chocolate is completely set.
