Ingredients:

3 potatoes
2 eggs
Breadcrumbs to taste
Cheese to taste (mozzarella is recommended in the recipe)
2 leeks, chopped
100 g (4 oz) of bacon, chopped
1 clove of garlic, minced
Salt, pepper, paprika, oregano
Olive oil
Instructions:
Preheat the oven to 200 degrees C (400 degrees F).
Boil the potatoes until tender. Drain and mash them.
In a large bowl, combine the mashed potatoes, eggs, cheese, leeks, bacon, garlic, salt, pepper, paprika, and oregano. Mix well.
Form the mixture into small patties.
Coat the patties in breadcrumbs.
Place the patties on a baking sheet lined with parchment paper. Drizzle with olive oil.
Bake for 20-25 minutes, or until golden brown and crispy.
