- Preparation of the milk cream: In a saucepan, pour the milk and add the sifted corn starch, mixing well with a whisk to avoid lumps. Make sure the cornstarch has completely dissolved in the milk. Also add vanillin to flavor the cream. Bring the pan to medium heat and continue stirring until the cream begins to thicken. Once the cream has reached the desired consistency (it must be thick but fluid), turn off the heat and let it cool.
- Adding the sweetener: When the cream is lukewarm, add the sweetener to taste and mix well. Taste to adjust the sweetness level to your taste. Remember that sweeteners can be stronger than sugar, so add gradually and taste occasionally.
- Assembling the cake: Pour half the cream into a cake mold lined with cling film. Level the cream with the back of a spoon to create an even layer. Cover with another layer of cling film and place in the refrigerator for at least 2 hours or until the cream is completely solidified.
- Decoration and serving: Once the first half of the milk cake has solidified, gently pour the rest of the cream on top of it and level carefully. Place back in the refrigerator for at least another 2 hours or until the cake is completely set. When you are ready to serve, remove the cake from the mold and decorate as desired with fresh fruit, dark chocolate flakes or a sprinkling of bitter cocoa.

- You can enrich your cold milk cake by adding layers of crumbled wholemeal biscuits between one layer and another of cream. This will add a nice crunch to your cake.
