Ingredients:
1.5 kg peeled potatoes
600 grams peeled carrots
9 eggs
Water (as needed)
1 tbsp salt (for cooking potatoes)
1 tbsp salt (for cooking carrots)
200 grams peas
1 tbsp salt (for cooking peas)
150 grams smoked turkey breast
150 grams mozzarella cheese
10 green olives
170 grams boiled corn
Chives to taste
For the Cream of Caramelized Onions:
1 large onion
1 tbsp butter (50 grams)
2 tbsp sugar
2 tbsp Shoyu sauce
1 tbsp all-purpose flour
200 ml water
1 tsp salt
For the Decoration Mashed Potatoes (Chantilly Potatoes):
400 grams potatoes (cooked in water)
50 grams parmesan cheese
100 grams cream cheese (can be replaced with mayonnaise, sour cream, or natural yogurt)
For Decoration (Suggestions):
Lettuce
Carrot
Pout Pepper
Black olives
Parsley to taste
Capers (optional)
Instructions:
1. Prepare the Salad:
Potatoes and Carrots: Cook the peeled potatoes and carrots in separate pots of salted water until tender. Drain and let cool. Dice into small pieces.
Eggs: Hard-boil the eggs, cool them under running water, peel, and chop.
Peas: Cook the peas in salted water until tender, then drain.
Combine: In a large bowl, mix the diced potatoes, carrots, chopped eggs, peas, smoked turkey breast, mozzarella cheese, green olives, boiled corn, and chives.
2. Make the Cream of Caramelized Onions:
Caramelize Onions: Slice the large onion thinly. In a pan, melt the butter over medium heat. Add the onions and cook until they start to caramelize.
Add Sugar and Sauce: Sprinkle with sugar, stir, and let it cook until fully caramelized. Add the Shoyu sauce.
Thicken: Sprinkle the flour over the onions, stir well, then gradually add water, stirring continuously to avoid lumps. Season with salt. Cook until the mixture thickens to a creamy consistency.
3. Make the Chantilly Potatoes:
Cook and Mash: Cook the potatoes in water until tender. Drain and mash them until smooth.
Mix: Add the parmesan cheese and cream cheese (or substitute) to the mashed potatoes. Mix until well combined and creamy.
4. Assemble and Decorate:
Mix Together: Combine the salad ingredients with the cream of caramelized onions until evenly coated.
Shape and Decorate: Place the salad on a serving platter. Use the Chantilly potatoes to pipe decorative patterns on top. Garnish with lettuce, grated carrot, pout pepper, black olives, parsley, and capers as desired.
