From half a kilogram of liver you can prepare a generous amount of cutlets. These liver cutlets, or pancakes, with vegetables turn out to be incredibly juicy and appetizing. I replaced the traditionally used flour with oatmeal, pre-ground to flour.

To begin, wash the liver thoroughly and chop it. I use a blender for this, but you can also mince the liver or just finely chop it with a knife if you want a more chopped texture of the cutlets.
Along with the liver, I add instant oatmeal to the blender, then pour the resulting mixture into a bowl.
I also chop the onion in a blender and grate the carrots on a fine grater. I also rub the squeezed potatoes on a fine grater so that they do not darken, and add them to the liver mass.
Then add eggs and sour cream to the bowl.

If the mass seems too liquid, add a tablespoon of semolina.
Mix all ingredients well, salt and pepper to taste. I let the mixture sit for about ten minutes.
Fry the cutlets on both sides until cooked in a frying pan.
These cutlets do not absorb much oil, so you will need very little fat for frying.
You can serve them either hot or cold, and they will be equally delicious.
