Ingredients:
2 tortillas
2 eggs
Water
Salt
Black pepper
Chopped parsley
Crushed pepper (optional)
Mozzarella cheese
2 tablespoons tomato sauce
Salami slices
Sliced tomato
Spinach leaves
Instructions:
Pour water into a bowl and dip one tortilla in the water.
Place it in a heated pan.
In a bowl, crack two eggs and season with salt and black pepper.
Mix well.
Pour the beaten eggs onto the tortilla in the pan.
Sprinkle chopped parsley and crushed pepper (if using) over the eggs.
Add a layer of mozzarella cheese on top of the eggs.
Dip the second tortilla into the water and place it on top of the cheese layer.
Cook the tortilla stack for about 5 minutes over low heat until the bottom tortilla is lightly browned and the cheese is melted.
Carefully flip the tortilla stack over using a spatula.
Spread 2 tablespoons of tomato sauce evenly on top of the flipped tortilla stack.
Sprinkle more mozzarella cheese on top of the tomato sauce.
Arrange salami slices, sliced tomatoes, and spinach leaves on top of the cheese.
Season with a little salt over the toppings.
Add another layer of mozzarella cheese on top of the toppings.
Cook the tortilla stack for another 5 minutes until the cheese is melted and bubbly.
Remove from heat and let it cool slightly before slicing and serving.
