½ cabbage, sliced

½ onion, sliced

A handful of green onions, chopped

1 red pepper, sliced (optional)

200g chicken breast, cut into strips

½ tbsp garlic, minced

1 tsp cooking wine

½ tbsp soy sauce

½ tbsp oyster sauce

½ tbsp sesame oil

1 egg

Pepper, to taste

Olive oil, for cooking

Directions:

Heat a little olive oil in a wok or large frying pan over medium heat.

Add the chicken strips to the pan and stir-fry until they are cooked through and lightly browned.

Remove the chicken from the pan and set aside.

In the same pan, add a bit more olive oil if needed and stir-fry the garlic and onion until they are soft and fragrant.

Add the cabbage and red pepper (if using) to the pan and continue to stir-fry until the vegetables are tender-crisp.

Return the cooked chicken to the pan and mix everything together.

In a small bowl, combine the cooking wine, soy sauce, oyster sauce, and sesame oil.

Pour this sauce over the stir-fry and mix well to coat all the ingredients.

Push the ingredients to one side of the pan and crack the egg into the other side.

Scramble the egg until it is cooked, then mix it into the rest of the stir-fry.

Season with pepper to taste and garnish with chopped green onions.
