Ingredients:
3 potatoes (700 grams/ 24.7 oz), peeled and sliced
Cabbage (700 grams/ 24.7 oz), chopped
Cheese (200 grams/ 7 oz), grated
1 onion, chopped
1 carrot, grated
A bunch of spring onions, chopped
Bacon (optional) (100 grams/ 3.5 ounces), chopped
Salt and black pepper to taste
Sunflower oil for frying
Directions:
Preheat your oven to 180°C (350°F).
Heat some sunflower oil in a pan and sauté the onion and carrot until soft.
Add the bacon (if using) and cook until crispy.
In a separate pot, boil the sliced potatoes for about 5 minutes, then drain.
In a baking dish, layer half of the boiled potatoes, followed by half of the sautéed onion, carrot, and bacon mixture, and then half of the chopped cabbage.
Season with salt and pepper.
Repeat the layers with the remaining ingredients.
Sprinkle the grated cheese on top.
Bake in the preheated oven for about 30-40 minutes, or until the cheese is golden and bubbly.
