Ingredients:
2 zucchinis
Salt
1 tomato
4 eggs
Fresh parsley

6 tablespoons of flour

Instructions:
Start by washing and slicing the zucchinis into thin rounds.
Sprinkle the zucchini slices with salt and let them sit for a few minutes to release excess moisture.
Then, pat them dry with a paper towel.
Slice the tomato into thin rounds as well.
In a bowl, beat the eggs and season with chopped fresh parsley, garlic powder, and black pepper.
Dip each zucchini slice into the beaten egg mixture, then coat it evenly with flour.
Heat olive oil in a pan over medium heat.
Once the oil is hot, add the flour-coated zucchini slices and cook until golden brown and crispy on both sides.
Remove the cooked zucchini slices from the pan and place them on a plate lined with paper towels to absorb any excess oil.
Preheat your oven’s broiler setting.
Arrange the cooked zucchini slices in a baking dish. Top each slice with a slice of tomato and a sprinkle of shredded mozzarella cheese.
Place the baking dish under the broiler for a few minutes, just until the cheese melts and starts to bubble.
Remove from the oven and sprinkle with fresh thyme leaves for an extra burst of flavor.
