Ingredients:

1 large potato

Salt, to taste

1 tablespoon potato starch

Sunflower oil, for cooking

1 onion, sliced

1 carrot, sliced

1 bell pepper, sliced

3 cloves of garlic, crushed (I

3 small tomatoes, halved

A bunch of spring onions, chopped

150 grams (5.3 oz) cheese, grated

1 egg

2 slices of ham, optional (for the meat lovers!)

Instructions:

Prep and Bake Potato Base:

Grate the potato and mix with potato starch and a pinch of salt.

Distribute the grated potatoes into greased molds.

Bake at 180°C (356°F) for 20 minutes.

Prepare Vegetables:

While the potato is baking, heat some sunflower oil in a pan. Fry the onion until it turns transparent.

Add the carrot, bell pepper, and crushed garlic. Season with salt and black pepper. Fry until they start to soften.

Mix in the chopped spring onions and leave the tomatoes in the pan for a few minutes.

Assemble and Bake:

Crack the egg over the vegetables in the pan. Arrange the ham slices if using.

Place the tomato halves and spread the grated cheese over the top.

Bake again at 180°C (356°F) for an additional 10 minutes or until the cheese is melted and bubbly.
