Ingredients:
250g leftover rice
2 eggs
1 green onion, chopped (15g)
1 tomato, sliced
50g cheese, grated
Salt to taste
Black pepper to taste
Some oil for frying
Instructions:
Mix the Base:
In a bowl, mix the leftover rice with the eggs, chopped green onion, salt, and black pepper.
Stir well to combine.
Cook the Base:
Heat some oil in a frying pan over medium heat.
Pour the rice mixture into the pan and press it down to form an even layer.
Cook for about 3-5 minutes or until the bottom is golden and crispy.
Add Toppings:
Place the sliced tomato on top of the rice base.
Sprinkle the grated cheese evenly over the tomato.
Cook Until Done:
Cover the pan with a lid and cook for another 3-5 minutes, or until the cheese is melted and the bottom is crispy.
Serve:
Carefully slide the rice pizza onto a plate.
