Mini Lasagnas

Ingredients:
12 lasagna noodles (or wonton wrappers for a shortcut)
1 lb (450 g) ground beef or Italian sausage (or use a meat substitute for vegetarian)
1 jar (24 oz or 680 g) marinara sauce
1 cup ricotta cheese
1 egg
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Salt and black pepper, to taste
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions:

Preheat the Oven:

Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin.
Cook the Noodles:

Boil the lasagna noodles according to the package instructions.

Once cooked, drain and cut each noodle into thirds, creating small squares that will fit into the muffin tin. (Alternatively, use wonton wrappers to skip this step.)
Prepare the Meat Sauce:

In a skillet, brown the ground beef or sausage over medium heat, breaking it up with a spatula.

Once cooked through, drain any excess fat.
Add the marinara sauce to the cooked meat, stirring to combine.

Let the sauce simmer for 5-7 minutes, then remove from heat.
Make the Ricotta Filling:

In a bowl, mix together the ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
Assemble the Mini Lasagnas:

Place a square of cooked lasagna noodle (or a wonton wrapper) in the bottom of each muffin cup.
Add a spoonful of the ricotta mixture, followed by a spoonful of meat sauce.
Sprinkle a little mozzarella cheese on top, then repeat the layers with another noodle square, ricotta, meat sauce, and mozzarella.
Finish with a final layer of noodle, a spoonful of meat sauce, and a generous sprinkle of both mozzarella and Parmesan cheese.
Bake:

Cover the muffin tin with foil and bake for 15 minutes.

Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serve:

Let the mini lasagnas cool in the muffin tin for 5 minutes, then use a knife to carefully lift them out.
Garnish with fresh basil or parsley, and serve hot!
