Ingredients

For the dough:

2 ½ cups all-purpose flour

1 teaspoon salt

1 cup warm water

1/2 cup melted butter

For the filling:

1 onion, chopped

700 grams ground beef

1 bunch fresh dill, chopped (or 1 tablespoon dried dill)

1 egg

1 teaspoon oregano

1 teaspoon salt

1 teaspoon paprika

150 grams grated cheese

Freshly ground black pepper to taste

Instructions:

For the dough:

In a large bowl, whisk together the flour and salt.

Add the warm water and melted butter to the flour mixture and stir until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.

Place the dough in a greased bowl, cover with plastic wrap, and let it rest for 30 minutes at room temperature.

For the filling:

Heat a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the ground beef to the pan and cook, breaking it up with a spoon, until browned.

Drain any excess grease from the pan.

Stir in the chopped dill, egg, oregano, salt, paprika, and black pepper to the ground beef mixture.

Remove the pan from the heat and stir in the grated cheese.

To assemble and bake:

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease a baking sheet.

Divide the dough into two equal balls.

On a lightly floured surface, roll out one ball of dough into a thin rectangle, about 1/8-inch thick.

Spread half of the ground beef mixture over the dough, leaving a 1-inch border around the edges.

Roll up the dough tightly, starting from the long end.

Seal the seam by pinching the edges together.

Repeat steps 3-6 with the remaining ball of dough and ground beef mixture.

Place the böreks on the prepared baking sheet, seam side down.

Brush the tops of the böreks with melted butter.

Bake for 20-25 minutes, or until the böreks are golden brown and flaky.

Let the böreks cool slightly before slicing and serving.

Tips:

You can use any type of cheese that you like for the filling, such as feta cheese, mozzarella cheese, or cheddar cheese.

If you don’t have fresh dill, you can substitute 1 tablespoon of dried dill.

Börek can be served as a main course or appetizer.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in a skillet over medium heat until warmed through.
