LASAGNA (quick and easy)

Ingredients:

For the Meat Sauce:

3 tbsp olive oil

1 tbsp mixed herbs (basil, thyme, parsley, rosemary) or 2 tsp dry Italian seasoning

1 large onion, finely chopped

4 cloves of garlic, minced

1 tbsp chili flakes

½ tsp black pepper

500g ground beef or pork

1 can (400g) diced tomatoes

1 can (200g) tomato paste

1 cup beef or chicken broth

Salt, to taste

For Assembling the Lasagna:

12 lasagna sheets, cooked according to package instructions

500g ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

Instructions:

1. Prepare the Meat Sauce:

Heat olive oil in a large skillet over medium heat.

Add the mixed herbs or Italian seasoning, chopped onion, minced garlic, chili flakes, and black pepper.

Sauté until the onions are translucent and fragrant, about 5-7 minutes.

Add the ground beef or pork to the skillet. Break it up with a spoon and cook until browned and cooked through.

Stir in the diced tomatoes, tomato paste, and beef or chicken broth.

Bring to a simmer.

Season with salt to taste. Reduce heat to low and let the sauce simmer for about 20-30 minutes, stirring occasionally, until thickened. Remove from heat.

2. Cook the Lasagna Sheets:

Bring a large pot of salted water to a boil.

Cook the lasagna sheets according to the package instructions until al dente. Drain and set aside.

3. Assemble the Lasagna:

Preheat the oven to 180°C (350°F).

Spread a thin layer of meat sauce on the bottom of a 9×13 inch baking dish.

Arrange a layer of cooked lasagna sheets over the meat sauce.

Spread half of the ricotta cheese evenly over the lasagna sheets.

Spoon half of the remaining meat sauce over the ricotta cheese.

Sprinkle with half of the Parmesan cheese and half of the mozzarella cheese.

Repeat the layers: lasagna sheets, ricotta cheese, meat sauce, Parmesan cheese, and mozzarella cheese.

4. Bake the Lasagna:

Cover the baking dish with aluminum foil and place it in the preheated oven.

Bake for 30 minutes covered, then remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly and the lasagna is heated through.

5. Serve:

Remove the lasagna from the oven and let it cool for about 10 minutes before slicing and serving.

Garnish with fresh basil or parsley, if desired.
