2 medium aubergines (700g)
Water + salt for soaking
3 eggs
Salt and pepper to taste
1 tablespoon of mustard
Sweet paprika to taste
150g breadcrumbs
2 large spoons of flour
Frying oil
Directions:
Slice the aubergines into rounds or strips, depending on your preference.
Soak the aubergine slices in a bowl of water mixed with a generous amount of salt for about 30 minutes.
This helps to remove any bitterness from the aubergines.
Drain and pat dry the aubergine slices with a paper towel.
In a bowl, beat the eggs and season with salt, pepper, and mustard.
Add a sprinkle of sweet paprika for extra flavor.
In a separate bowl, mix the breadcrumbs and flour.
Heat the frying oil in a deep pan over medium heat.
Dip each aubergine slice first in the egg mixture, then coat with the breadcrumb and flour mixture.
Fry the coated aubergine slices in the hot oil until they are golden brown and crispy on both sides.
Drain on paper towels to remove excess oil.
Serve hot and enjoy your crispy aubergine fritters with a side of yogurt or your favorite dipping sauce.
