Ingredients
For the base
- 2 large eggs
- 220 ml (1 cup) milk
- 3 tablespoons (45 g) all-purpose flour
- 2 tablespoons (30 ml) olive oil
- 80 g (¾ cup) grated Parmesan cheese
Vegetables
- 1 medium head broccoli (about 300 g/10.5 oz), cut into florets
- 1 medium zucchini (200 g/7 oz), trimmed and sliced
- 1 large carrot (120 g/4 oz), peeled and chopped
- 1 bell pepper (150 g/5.3 oz), diced
- 1 medium onion (150 g/5.3 oz), finely chopped

- 100 g (3.5 oz) light mozzarella, cut into cubes
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped
Procedure
1. Prepare the vegetables
- Wash all vegetables well.
- Cut the broccoli into small florets.
- Peel and cut the carrot into small pieces.
- Cut the zucchini into thin slices, the pepper into cubes and the onion into small pieces.
- In a large skillet, heat a tablespoon of olive oil and sauté the vegetables for 5-7 minutes until tender. Remove from heat and set aside.
2. Prepare the base
- In a bowl, beat the eggs and add the milk.
