Stuffed Meat Cotoletta
Ingredients:
For the meatballs:
800 g ground meat (mixed beef and pork)
1 egg
1/2 cup breadcrumbs
1/4 cup milk
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
Salt and ground black pepper to taste.
For the filling:
100g cooked ham, thinly sliced
100g provola or mozzarella, sliced
1 roasted red pepper, thinly sliced (optional)
Seedless black olives (optional)
For the topping:
200ml tomato puree
2 tbsp tomato paste
1 onion, finely chopped
2 tbsp olive oil
Salt and pepper to taste
Chopped fresh parsley, for garnish
Instructions:
Prepare the filling:
Prepare the filling by thinly slicing the cooked ham, cheese and roasted chili pepper.
If you prefer, you can also add some black olives.
Prepare the meatball:
In a large bowl, mix the ground meat with the egg, breadcrumbs, milk, chopped onion, garlic, fresh parsley, salt and pepper.
Mix well until the mixture is smooth.
Roll out the meatball mixture:
Roll out the meatball mixture on a sheet of baking paper until it forms a rectangle about 1 cm thick.
Add filling:
Evenly distribute the prepared filling (ham, cheese, peppers and olives) over the surface of the meatball mixture, leaving a margin at the edges.
Roll the meatballs:
Using the baking paper, roll up the meatloaf starting from the longest side, creating a tight roll.
Remember to seal the ends well so that the filling does not leak out during cooking.
Cooking the meatball:
Heat the olive oil in a large skillet and sauté the finely chopped onion until translucent.
Add the tomato puree, tomato paste, salt and pepper.
Cook for a few minutes to thicken the sauce.
Place the chopped cutlet in the pan with the tomato sauce, cover with a lid and cook over medium-low heat for about 40-50 minutes, gently turning the meatballs halfway through cooking and adding a little water if necessary to keep the sauce moist.
Once cooked, wait a few minutes before cutting the meatloaf.
Serving:
Slice the chopped cutlet thickly and serve hot, garnished with a little tomato sauce and chopped fresh parsley.
