How to Make Roller Coaster Cookies
INGREDIENTS
Separate the following ingredients to make this roller coaster cookie:
2 cups sour cassava starch
1 pinch salt (adjust to taste)
3 free-range eggs
100ml vegetable oil
100ml water or milk (your choice!)
50g grated mozzarella (optional, but recommended!)
Note: the measurement is 200ml.
The pan used in this recipe is 30×25.
METHOD OF PREPARATION
In a blender, beat the eggs with a pinch of salt.
Add the oil and water (or milk) and beat until well combined.
Add half of the cassava starch and beat for 2 minutes.
Add the rest of the starch and beat again until smooth.
Transfer the dough to a greased baking tray, spread it out well and, if desired, sprinkle more mozzarella on top.
Bake in a preheated oven at 180°C for about 30 minutes or until golden brown.
