This chicken recipe is a true treasure of traditional cooking, inspired by the tricks my grandfather used to share.

With simple ingredients and clear steps, you can prepare a dish that will surprise everyone with its flavor and texture.

Perfect for a family meal or to impress your friends, this chicken with golden potatoes is a delight that combines classic techniques with a modern and delicious result.

Let’s get to work!

Ingredients

  • 1 chicken
  • 2 onions
  • 2 tomatoes
  • 1.5 teaspoons of salt
  • 0.5 teaspoons of cilantro
  • Black pepper to taste
  • Cumin to taste
  • 500 ml of vegetable oil
  • 1.5 kg of potatoes or baby potatoes
  • 2-3 bay leaves
  • 50 grams of butter

Preparation

  1. In a large bowl, mix the salt, coriander, black pepper and cumin. Add the chopped onions and tomatoes. Marinate the chicken in this mixture for 2 hours.
  2. After 2 hours, remove the chicken from the marinade and clean it well, reserving the marinade.
  3. In a large skillet, heat the vegetable oil. Fry the chicken until golden brown, but not fully cooked. Remove the chicken and set aside.
  4. In the same pan with the hot oil, fry the potatoes until they are golden brown, but not completely cooked. Remove and set aside.
  5. Remove the excess oil from the pan. Add the reserved marinade and fry for 2 minutes.
  6. I added the bay leaves and butter to the pan. Stir well.
  7. Return the chicken and potatoes to the pan with the marinade. Simmer for 1 hour, until everything is cooked through and the flavors have blended.

Tips

  • For a more intense flavor, you can let the chicken marinate overnight in the refrigerator.
  • Pair this dish with a fresh salad or steamed vegetables for a complete and balanced meal.
  • If you want to give it an extra touch, you can add a little white wine to the marinade to give it a deeper flavor.

This dish combines the wisdom of traditional cuisine with a delicious result that everyone will love.
