Ingredients
- 1 chicken
- 2 onions
- 2 tomatoes
- 1.5 teaspoons of salt
- 0.5 teaspoons of cilantro
- Black pepper to taste
- Cumin to taste
- 500 ml of vegetable oil
- 1.5 kg of potatoes or baby potatoes
- 2-3 bay leaves
- 50 grams of butter
Preparation
- In a large bowl, mix the salt, coriander, black pepper and cumin. Add the chopped onions and tomatoes. Marinate the chicken in this mixture for 2 hours.
- After 2 hours, remove the chicken from the marinade and clean it well, reserving the marinade.
- In a large skillet, heat the vegetable oil. Fry the chicken until golden brown, but not fully cooked. Remove the chicken and set aside.
- In the same pan with the hot oil, fry the potatoes until they are golden brown, but not completely cooked. Remove and set aside.
- Remove the excess oil from the pan. Add the reserved marinade and fry for 2 minutes.
- I added the bay leaves and butter to the pan. Stir well.
- Return the chicken and potatoes to the pan with the marinade. Simmer for 1 hour, until everything is cooked through and the flavors have blended.
