[No-Oven] Banana Cake with Egg and Bananas_Super Simple Recipe_Banana Upside Down Cake

Ingredients:
1 egg
60g (6 Tbsp) sugar
130ml milk
2g (1/2 tsp) salt
1 tsp vanilla extract
150g (1 1/4 cups) cake flour or all-purpose flour
5g (2/3 Tbsp) baking powder
50ml cooking oil
10g unsalted butter
15g (1.5 Tbsp) unrefined sugar or regular sugar
2 bananas, sliced

Instructions:

Prepare the Caramelized Bananas:
In the 20cm frying pan, melt the unsalted butter over low heat.
Sprinkle the 1.5 tablespoons of sugar evenly over the melted butter.
Arrange the banana slices in a single layer over the sugar.

Cook this mixture on very low heat for about 5 minutes, or until the sugar starts to caramelize and the bananas soften slightly. Be careful not to burn the caramel.

Mix the Cake Batter:
In a mixing bowl, whisk together the egg and 6 tablespoons of sugar until the mixture is light and fluffy.


Add the milk, salt, and vanilla extract to the egg mixture and stir until well combined.
Sift in the flour and baking powder, then mix until just combined, ensuring not to overmix.

Gradually pour in the cooking oil while stirring to incorporate it into the batter smoothly.

Cook the Cake:
Pour the cake batter gently over the caramelized bananas in the frying pan.

Spread the batter evenly with a spatula.
Cover the pan with a lid or aluminum foil tightly to trap the steam and set the heat to very low. Cook the cake on this very low heat setting for about 25 minutes. Check occasionally to ensure it is cooking evenly and not burning. Adjust the heat if necessary.
