Ingredients:

3 potatoes, peeled and grated

1 onion, sliced

1 carrot, grated

Sunflower oil for frying

Directions:

In a large mixing bowl, combine the grated potatoes, sliced onion, grated carrot, minced garlic, grated cheese, chopped spring onions, egg, salt, and flour.

Mix well until all ingredients are evenly combined.

Heat sunflower oil in a frying pan over medium heat.

Take a spoonful of the potato mixture and carefully drop it into the hot oil, flattening it slightly with the back of the spoon to form a fritter shape.

Repeat to make more fritters, leaving enough space between each in the pan.

Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.

Use a slotted spoon to remove the fritters from the oil and place them on a plate lined with paper towels to drain any excess oil.

Repeat the frying process with the remaining potato mixture until all fritters are cooked.

Serve the crispy potato and onion fritters hot, garnished with extra spring onions if desired.
